Eggless Chocolate Cake
It’s been a while I baked a cake and eggless chocolate cake has been there in my mind for quite some time. Eggless chocolate chip cake is something that is liked by people of all age groups. Few don’t even need a reason to grab it. Personally, I would never skip a chance to bake an egg free chocolate cake. I prefer my cakes to be eggless but that doesn’t mean that I don’t bake them with eggs. Now because I was baking an eggless cake, I have used condensed milk as an alternative. Condensed milk is sweet enough to give sweetness to the cake and hence I have not used additional sugar. People who prefer their cakes to be extra sweet, may add sugar according to their taste.
Weekends and chocolate cake
A typical lazy weekend morning, my kid at home and husband not rushing for his office. Now all of this is a combination that triggers a lot of demands from the family to make something good for them. When I opened my refrigerator, I found some leftover condensed milk. I scratched my head (not in reality, but in imagination) and thought what I could do with it.
Diwali was all about Karachi Fruit Biscuits and Choco Chips Cookies. As the Christmas is nearing, so thought to bake a cake. The First thought was to bake an eggless vanilla cake with berries, but my kid’s love for chocolate made me think to make something chocolaty. I had to change my mind from a vanilla cake to an eggless cake.
How to make eggless chocolate cake
In the quest of finding recipes for eggless chocolate cake, I am sure I would have read around 20 odd recipes. I wanted my cake to be moist and was worried if the chocolate cake recipes I am reading will help me achieve in baking a moist cake.
After reading multiple eggless chocolate cake recipes, I narrowed down to what I needed and started gathering ingredients. I like to keep things simpler and so is this recipe. The ingredients are the one you will easily find in any kitchen and the total time on recipe is just about 40 minutes.
A very famous Spanish proverb says that “The belly rules the mind”. This is at least true with my folks. The moment they get something delicious to eat they start talking all the fancy things for me and put me on cloud 7.
This cake is really moist and the colour of this cake will make you fall in love. This is my no-fail recipe for an eggless chocolate cake. Anyone who has tried this recipe so far, has come back with tons of love. Do leave a comment for me if you like my recipe.
|Condensed Milk||120 ml|
|All-purpose flour||125 gm|
|Cocoa Powder||40 gm|
|Coffee Powder||5 gm|
|Baking Powder||½ tsp|
|Baking Soda||½ tsp|
|Vanilla Essence||1 tsp|
|Choco Chips||¼ cup|
|Total Servings||10 Slices|

In a large mixing bowl, take condensed milk, oil and essence. Mix all well.
In a separate bowl sieve All-purpose flour, cocoa powder, baking powder, baking soda and salt together.
Take half cup lukewarm milk and dissolve coffee into it. Now add this mixture to condensed milk.
Add dry ingredients into wet ingredients and fold gently. Don’t beat it.
Once you get a smooth batter, just add vinegar to it and mix gently to get batter of dropping consistency.
Meanwhile, preheat the oven at 180 degrees Celsius for 10 minutes.
Grease a tin loaf pan with butter or oil. Pour the mixture into it.
Sprinkle some Choco chips on the top and tap the tin on the counter once to release the air bubbles.
Now bake this in a preheated oven for 25 minutes at 180 degrees Celsius or till it passes the toothpick test.
Let the cake cool before you slice and serve.
