Take approximately 200 gms of coriander leaves. Wash and finely chop them .
Take a medium sized Tomato and 5-6 green chillies. Chilies can be altered depending on the spiciness of the chilies and your taste buds.
Roughly Dice the Tomato and chop the green chilies.
In a blender jar, add the chopped coriander leaves, green chilies and diced tomato.
Add 50 gms of roasted peanuts to the jar. Peanuts will give a nice consistency to your chutney.
Add a teaspoon of salt and 1 tbsp of lemon juice.
Add 2-3 ice cubes into the blender jar. We add ice cubes to maintain the fresh green colour of the coriander leaves.
Close the blender jar and grind it to a smooth paste.
Once blended to a smooth paste, collect the coriander chutney in a clean and dry glass jar.
Close the glass jar and refrigerate it.
Coriander chutney stays good for a week when refrigerated .
Serve it as an accompaniment with a snack or enjoy with paratha or naan.
